How many times have you needed a dish to take to an event and didn’t remember until the last minute? I have more times than not.
The recipe today is great for something quick to whip up and is always a crowd pleaser.
When you first hear pineapple and cheese, you might think they wouldn’t go together. But trust me, try this once and you will be adding this one to your staple of recipes to make again.
What is so great about this is it has all the items that should be in your pantry.
Pineapple Cheese Casserole Recipe
Ingredients:
- 1-16 oz. can Pineapple chunks
- 3 Tbsp. Plain flour
- 1/2 cup Granulated sugar
- 1 cup Cheddar cheese grated
- 1 sleeve Ritz crackers crumbled
- 1/2 stick melted butter
First, drain the pineapple, leaving a small amount of the juice with the fruit.
Mix the flour and sugar and add this to the pineapple mixture and stir well.
Stir in grated cheese.
A tip when using cracker crumbs, I just crush them right in the package. It makes it a lot easier and there is less clean up.
Cover completely with cracker crumbs then pour melted butter over the crumbs.
Bake at 350 for 30 minutes.
As you can see, I have placed the casserole in a foil pan. These work great for freezing your dishes for later. That way you will be ahead of the game for a big dinner in the future with one side already done. This is a great casserole to deliver to new neighbors, new parents or people returning home from the hospital. No one has to remember to return your dish.
