This week I am sharing one of my mother’s traditional recipes that has also become one of mine. When anyone takes a bite of these delicious treats they will declare that these are the “best cookie in the world!”
They are loaded full of extras making them crunchy and sweet. The surprise ingredient, not often found in baking, adds an extra crunch. You’ll find out in just a minute what that is.
You first need to cream your butter and both sugars. Let those mix for a few minutes til they are creamy. Next, add the egg, letting it get completely mixed. Then you can add your vanilla and oil. Let this mix for about three minutes.
Now you will want to add your “goodies”, the oats, coconut, nuts and the surprise ingredient — crushed cornflakes! Every time someone asks what is in them, they are really surprised at that one!
Best Cookie in the World Recipe
Ingredients
- 1 Cup Butter
- 1 Cup Brown Sugar
- 1 Cup Granulated Sugar
- 1 Egg
- 1 Cup oil
- 1 Tsp. Vanilla
- 1 Cup Oats
- 1 Cup Crushed Cornflakes
- 1 Cup Shredded Coconut
- 1/2 Chopped Pecans ( or whatever your nut preference is)
- 3 1/2 Cup sifted Plain Flour
- 1 Tsp. Baking Flour
- 1 Tsp. Salt
Directions
Preheat oven to 325°.
After you have all these in, mix in the rest of the dry ingredients. This batter is really oily and once you get the flour in it will be easier to work.
Since you will be rolling out the cookies, you may want to put dough in the refrigerator for about 1 hour. If your kitchen is warm while you mix the dough, it can get a little too soft to roll. Once it is chilled, remove and begin rolling until they are the size of a large marble. If you have little ones, this would be a fun thing to get them involved in the kitchen.
Once you have your ungreased cookie sheet full, take a fork and gently press each one down. Pop them in your preheated 325° oven for around 12 minutes or until they are lightly brown around the edge.
